Cocktail Hour: Red Currant Cooler
Perfectly refreshing for those hot summer days! This drink is a great non-alcoholic afternoon thirst quencher, and can be dressed up with the addition of gin for a summer evening cocktail hour.
Red Currant Cooler
1 oz Red Currant Syrup
2 oz gin (optional)
2 slices of lime
1 sprig rosemary
sparkling water
In your favorite summer cocktail glass, muddle lime slices and rosemary. Add crushed ice, red currant syrup, and gin. Top with sparkling water and garnish with fresh currants and rosemary.
Red Currant Syrup: Puree 1 cup red currants in a blender. Push through a strainer to remove seeds. Add 2 tablespoon sugar or to taste.
Refrigerate leftover syrup.
