Our Asilik II edition is made from the exquisite Memecik olives, and this edition offers hints of artichoke, eucalyptus, thyme, and tomato that will complement your dishes. The process behind creating this EVOO is very meticulous.
The olives are hand-picked in late October and within a few hours, the olives are cold-pressed and sealed in stainless steel casks under a nitrogen layer to minimize oxidation. This process is important for producing olive oil that retains the highest level of healthy substances such as polyphenols, monounsaturated fats, and anti-inflammatory properties of oleic acid. The average polyphenol content in the U.S grocery market is 55 mg/kg whereas this edition stands out at an astonishing 609 mg/kg content! Therefore, it is very healthy for the body. Also, due to that high polyphenol content, it has a high smoke point of 480 degrees Fahrenheit!
