Method of use:
Excellent for the preparation of traditional Neapolitan pizza with medium-long leavening. Also excellent for bread and leavened pastries (panettone, pandoro, brioches ...).
Using a more or less refined type does not change the intended use but only the organoleptic profile and the final appearance (less refined flours tend to rise less but to be tastier than refined ones). On the other hand, the final result changes a lot if a more "strong" or less "strong" flour is used. The former resist well to very long leavening and prolonged mechanical stress, while the latter do not have this capacity and are therefore more suitable for products that require short leavening, or for desserts where a conspicuous friability is desired (shortcrust pastry, sponge cake, etc. . etc.).
Ideal for soft, light doughs. Recommended for a light bread with soft and white crumb.
